A Journey of Entrepreneurship and Coffee

Born in the coffee mountains of Minas Gerais, Thiago Dias has coffee in his veins – but his story in business began early. In the 1990s, as a child, he was immersed in his family’s pasta production business, where he learned the values of hard work and quality. By his teens, he was already an entrepreneur: at 17 (2006), he launched his first venture, a cybercafé, which later expanded into an IT and computer repair company – a field he worked in for over a decade. Before moving to the UK, he founded Titito Massas, crafting artisanal pasta with no additives, further honing his passion for premium products.

It was on a Welsh farm during Christmas 2023 that his vision for Why So Coffee was born – blending Brazilian charm with global curiosity. In 2025, back in Brazil, he co-founded A.L.T Origens Coffee with André Chavari (production) and Logan Ramos (agronomy), focusing on exporting traceable, socially impactful specialty coffee. "Why So was our seed. A.L.T is the harvest: a model that values both growers and those who cherish exceptional coffee."

André Chavari

Creator of Café Convicto and a leading voice in the coffee industry, André de Lima Chavari has dedicated his life to redefining the connection between producers, consumers, and coffee. Born in Andradas, Minas Gerais, he began his coffee journey 13 years ago at a local café, where he discovered his enduring passion for the craft. Over the years, André has worked with multiple industry leaders, gaining deep expertise in every stage of coffee production—from farm to cup. His mission extends beyond delivering exceptional coffee: he bridges the gap between small-scale producers and the global market, empowering them to recognize the true worth of their beans and secure better livelihoods for their communities. Café Convicto is the embodiment of this philosophy. More than a brand, it’s a movement that celebrates the story behind every bean. To André, each cup is an invitation to honor the dedication of coffee growers, fostering meaningful connections and unforgettable experiences. Logan Ramos

Has been a close friend of Thiago’s since 2000—and today, he’s also his indispensable link to Brazil’s coffee farms. As an agronomist (graduated 2017, active since 2014), Logan combines his passion for agriculture, nature, and coffee with hands-on expertise in farm management. Based in Southern Minas Gerais, he works directly with producers, building trust and refining practices to maximize yields and quality. While Thiago oversees operations abroad, Logan ensures everything runs seamlessly on the ground, merging local knowledge with global goals.
